Claire Handleman

Claire Handleman has been cooking in New York for seven years, working at some of the city’s greatest restaurants (Jean-Georges, Eleven Madison Park, Del Posto). Over the past 10 years, Claire has spent several months a year traveling and eating her way through South-East Asia. Bangkok has always served as her home base while in Asia, and it is now where she spends the majority of her time while abroad.
Four years ago, she was introduced to David Thompson's, the chef of Nahm. Inspired by his attention to detail and historic recipes, she asked if she could work in his kitchen. She now spends part of every trip immersed in learning new recipes and techniques. And when not in his kitchen, she is befriending locals and learning how to cook their favorite dishes. She’s also had the wonderful luck of meeting Thai friends with the same interests: food and culture. She recently learned how to harvest rice and how to cook ancient desserts, and now she’s ready to share her love of Thai food and culture in her own restaurant in New York.
